Make sure you have some warm pita bread to go along with these light, fresh dishes. This style of cooking is all about fresh flavors and cooking over fire.
Tzatziki Sauce
Ingredients:
- 1/2 Large cucumber (peeled)
- 1½ cups Plain full-fat Greek yogurt
- 2 cloves Garlic (grated)
- 2 tablespoons Extra virgin olive oil
- 2 tablespoons Fresh mint (chopped)
- 1 tablespoon Fresh lemon juice
- 1 tablespoon Louisiana Love Seasoning Blends
- 1 tablespoon Fresh dill (chopped)
Method:
Split the cucumber lengthways and use a spoon to remove seeds.
Combine the all of the ingredients in a large bowl.
Cover and refrigerate for at least 4 hours or overnight.
Grilled Chicken, Marinated in Yogurt
Ingredients:
- 1 lb. Chicken thighs (boneless)
- ½ cup Greek yogurt (non-fat)
- 1 tablespoon Fresh lemon juice
- 2 tablespoons Fresh mint (chopped)
- 1 teaspoon Cavendar’s Greek Seasoning
- 1 tablespoon Louisiana Love Seasoning Blends
Method:
Season chicken on all sides with Louisiana Love and Cavendar’s.
Combine remaining ingredients in a bowl, add chicken, and coat.
Marinade overnight.
Grill over hardwood charcoal until an internal temperature of 160° is reached.
Grilled Pork Chops, Mediterranean Style
Ingredients:
- 6 Pork chops (center cut, ¾” thick)
- 3-4 tablespoons Extra virgin olive oil
- Louisiana Love Seasoning Blends to taste
- Cavendar’s Greek Seasoning
Method:
Coat pork chops with olive oil.
Season with dry seasonings.
Grill over hardwood charcoal until a temperature of 135° is reached.
Tip: Add a fruit wood to the fire such as apple, cherry, peach, or pear to accent the flavor of the pork.
