Stuffed Pork Tenderloin
This one is huge on flavor! Rich cream cheese and fresh herbs along with sweet gulf shrimp are the perfect complement for the tender, lean pork loin.
Sliced and served over a bed of creamy corn grits and it’s one of the perfect meals.
Ingredients for stuffing:
- 2 tablespoons Olive oil
- 1 medium White onion (chopped)
- ½ lb. Gulf shrimp (70-90 count, chopped)
- 3-4 cloves Garlic (chopped)
- 2 cups Parsley (Italian, chopped)
- 4 cups Fresh baby spinach
- 2 cups Green onions (chopped)
- 3 lb. Pork tenderloin
- 1 lb. Cream cheese (room temperature)
- Louisiana Love Seasoning Blends to taste
Method for stuffing:
Place oil in a heavy skillet over medium-high heat. Once hot, add onions and sauté for 5-7 minutes until clear.
Add shrimp and cook until just pink.
Add garlic, parsley, spinach, green onions, and cook for 2-3 minutes more then remove and let rest.
Drain off any collected liquid, add cream cheese, Louisiana Love, and stir well to combine.
Taste and adjust seasoning.
Method for pork loin:
Slice the pork loin along its length so that it is about and inch thick in one continuous piece.
Season with Louisiana Love and spread the cream cheese mixture, roll, and tie the roast with 100% cotton butcher’s string.
Grill the loin over medium hardwood lump charcoal fire until a temperature of 150° is reached in the middle of the roast.
Let rest for 5-10 minutes, then slice and serve.
Guru Grilled Cabbage
Ingredients:
- 1 lb. Bacon
- 1 large Green cabbage
- 1 medium Red onion (sliced)
- ½ cup Dry white wine
- Louisiana Love Seasoning Blends to taste
Method:
Cook bacon in a skillet until done, but still tender. Reserve fat.
Split cabbage in half through the root.
Place each half in two or three layers of heavy aluminum foil, pour reserved bacon fat and wine over each half.
Cut bacon slices into large pieces.
Season the cabbage halves well, place bacon and onion slices on each half.
Wrap the halves with foil and place on the corners of the grill with the cut sides facing up.
Cook for 45 minutes to an hour until very soft.
