Incredible Kofta
Kofta are simply a form of meatball or meatloaf that originates from central and southern Asia.
Traditionally, they are formed of lamb and beef and seasoned with salt, pepper, and warm middle eastern spices. Kofta are the comfort food you never knew existed.
Ingredients:
- 1lb. Ground beef (80/20)
- 1lb. Ground lamb (80/20)
- 1 small White onion (finely chopped)
- 2-3 cloves Garlic (finely chopped)
- 2 ounces Pine nuts (toasted and chopped)
- ½ cup Flat leaf parsley (chopped)
- 2 medium Serrano pepper (seeded and finely chopped)
- 1½ teaspoons Ground cinnamon
- 1½ teaspoons Ground allspice
- 1½ teaspoons Freshly ground black pepper
- Louisiana Love Seasoning Blends to taste
- 10 Cinnamon sticks (about 4 inches in length)
Method:
In a large bowl combine all of the ingredients until well mixed.
Form 3-ounce portions into an elongated egg shape and insert a cinnamon stick part way into one end leaving a handle.
Grill until 145° in the thickest part of the meat.
Tahini Sauce
This simple, delicious sauce is about the consistency of honey and the perfect compliment to the rich Kofta.
Ingredients:
- ⅔ cup Tahini paste
- 3 tablespoons Fresh lemon juice
- ½ cup Cold water
- Louisiana Love Seasoning Blends to taste
Method:
Combine all ingredients in a suitable bowl.
Taste and adjust seasoning.
Chocolate Fondue
This is really nothing more than ganache by another name. But the addition of cinnamon and vanilla ties this dish to the Kofta by continuing the flavor profile.
Also, the fondue differs from ganache in that ganache is used as a coating or topping whereas this fondue is a dipping sauce.
The real fun is what is dipped into the fondue. Apples…sure, Grapes…absolutely, Parmesan cheese??? Yes!! Blue cheese?? Why not! French bread?? Oh yes!! There is no limit so go wild!
Ingredients:
- 2 cups Heavy whipping cream (divided)
- 7 ounces 70% dark chocolate
- 3.5 ounces 50% dark chocolate
- 3.5 ounces Milk chocolate
- 2 teaspoons Vanilla extract
- 1 teaspoon Ground cinnamon
Method:
Add 1 cup of cream and the chocolates in a heavy pan.
Place the pan over medium heat.
Once the cream starts to steam, stir until the chocolate is completely melted.
The consistency should be thick enough to coat whatever is dipped in it, but can still be smoothly poured.
Add cream to reach proper consistency.
Reduce heat to simmer.
Add vanilla and cinnamon.
Dip away!!
