Guru Steen’s Sausage Poboys
This poboy is unmistakably Cajun. The dark gravy, smothered onions, and incredible flavor of fresh pork sausage with Steen’s syrup is amazing.
Ingredients:• 2 lbs.Fresh pork sausage with Steen’s syrup• 2 tablespoonsOlive oil• 1 mediumYellow onion (chopped)• 4-5 clovesGarlic (chopped)• 2-3 cupsWater• 1 tablespoonCornstarch (dissolved in 2 tablespoons cold water)• 4 Poboy buns• 2-3Roma tomatoes (sliced)• Louisiana Love Seasoning Blends• Mayonnaise, Mustard as desired• ¼ cupGreen onions (chopped)
Method:1. Place a heavy skillet over medium-high heat and add oil.2. When oil is moving and shiny, add sausage links.3. Brown well on all sides.4. Note: Let the sausage sear. It will release from the pan when it is ready to turn.5. Remove sausage from pan and add onions, browning well.6. Add garlic, cooking for a minute or two.7. Add water and scrape the bottom of the pan well.8. Season with Louisiana Love to taste.9. Add sausage back to pan, reduce to simmer, and cook for 5-7 minutes.10. Thicken with corn starch solution, then allow to simmer for 3-4 minutes.11. Taste and adjust seasoning.12. Toast buns and dress with condiments of choice.13. Add sausage links to buns, drizzle with gravy, and add tomatoes.14. Garnish with green onions.15. Finish with a dusting of Louisiana Love.
Cajun Fried Rice
Ingredients:• 2 lbs.Fresh pork sausage with Steen’s syrup• ¼ cupOlive oil• 3 cupsCooked rice (cold)• 1 mediumYellow onion (chopped)• 2-3 clovesGarlic (chopped)• Louisiana Love Seasoning Blends• 2 largeEggs• ½ cupGreen onions (chopped)
Method:1. Cut casing from sausage.2. Place a heavy skillet over medium-high heat and add oil.3. When oil is hot, add sausage. 4. As sausage cooks, chop into small pieces with spoon.5. Once sausage is browned, add rice, onions, and garlic.6. Season with Louisiana Love to taste. 7. Cook until rice starts to stick to the bottom of the pan.8. Remove to a plate and top with green onions.9. Cook two eggs over easy and add to top of rice.10. Dust with Louisiana Love and serve.
