Catfish Street Tacos with Watermelon Salsa
Ingredients:
For the Blackened Catfish
4-6 Guidry’s Catfish Filets (thawed)
4 tsp Blackening Seasoning
2 tsp unsalted butter
2 tsp olive oil
4-6 Small tortillas
For SALSA:
4 cups diced seedless watermelon
1 cup diced cucumber
1 cup diced bell pepper
1 cup diced tomatoes
1 cup diced red onion (about half a medium red onion)
2/3 cup chopped fresh cilantro leaves
1/2 cup chopped fresh mint leaves
1–2 jalapeno(s), seeded and finely diced (add more/less to taste)
zest and juice of 1 lime
Mix all ingredients for salsa together and let sit for 10-20 minutes.
Cook catfish strips in air fryer as directed.
Pat catfish filets dry and season on both sides. Melt butter and oil in black cast iron skillet. Place seasoned catfish filets presentation side down first in the skillet. Cook for about 4-5 minutes, then flip and cook for another 4-5 minutes until done.
Place one catfish strip on each tortilla and top with salsa.
