Guru Calzones

This simple dish comes together quickly thanks to prepared pizza dough.  A little bit of prep work and some simple sauces makes for some delicious eats.

Ingredients for White Sauce

  • 2 ounces Unsalted butter (½ stick)
  • 1 medium White onion (chopped)
  • 1 medium Poblano pepper (seeded and chopped)
  • 4-5 cloves Garlic (chopped)
  • ½ cup Baby bella mushrooms (sliced)
  • ½ cup Dry white wine (Chardonnay, Sauvignon Blanc)
  • 1 pint Heavy cream
  • 1 tablespoon All-purpose flour (dissolved in cold water)
  • 1 ounce Fresh lemon juice
  • 4-5 leaves Fresh basil (chopped)
  • 1 tablespoon Italian flat-leaf parsley (chopped)
  • Louisiana Love Seasoning Blends to taste

Method for White Sauce

  1. Place a heavy skillet over medium-high heat and add butter.
  2. Once melted and foaming, add onions and cook for 3-4 minutes.
  3. Add poblano peppers, garlic, and mushrooms cooking for another 3-4 minutes.
  4. Add wine and let reduce by half.
  5. Add cream and let boil for 3-4 minutes.
  6. Slowly add flour mixture until a thick sauce consistency is reached, but not a paste, then reduce heat to simmer.
  7. Note: If sauce is too thick, add cream or water to thin.
  8. Season to taste with Louisiana Love.
  9. Add basil and parsley then remove from heat.
  10. Taste and adjust seasoning.

Ingredients for Red Sauce

  • 2 cups Prepared marinara sauce (Barilla)
  • 2 tablespoons Italian blend seasoning
  • 1 tablespoon Fresh lemon juice
  • 3-4 leaves Fresh basil (chopped)
  • 2 cloves Garlic (chopped)
  • Louisiana Love Seasoning to taste

Method for Red Sauce

  1. Combine all ingredients in a suitable, heavy pot and place over medium heat.
  2. Once simmering, cook for 5-7 minutes stirring often.
  3. Taste and adjust seasoning.

Ingredients for Calzones

  • 8 slices Bougie Bologna
  • 1 package Prepared pizza dough
  • 1 medium White onion (sliced)
  • 2 cups Shredded mozzarella cheese
  • ½ cups Corn meal
  • White sauce (recipe above)
  • Red sauce (recipe above)

Method for Calzones

  1. Place a pizza stone over high heat on a grill or in a oven set to 475˚ for a minimum of 20 minutes.
  2. Grill the Bougie Bologna slices until medium charred and sizzling.
  3. Remove and cut into strips.
  4. Working on a surface lightly dusted with corn meal, spread out dough using fingers until two rectangles are formed measuring approximately 12 inches by 6 inches.
  5. Cut these in half to form four 6 inch by 6 inch squares.
  6. Lightly sauce one half of each of the squares using 1-2 tablespoons of your choice of sauce.
  7. Stack ingredients on dough as desired being careful not to put too much as the dough will tear when trying to close.
  8. Close the calzones and press the seams to seal.
  9. Using a sharp knife, cut 2 or 3 slits to vent.
  10. Lightly dust the pizza stone with corn meal and place the calzones.
  11. Let cook for 4-5 minutes.  
  12. If top is not browning, flip using a spatula and cook for another 2-3 minutes then remove.
  13. Top with more sauce.

Bougie Guru Pasta

Get ready for a flavor explosion!  This dish highlights the richness of Bougie Bologna along with some earthy umami from mushrooms, briny olives, and bright lemon.  It’s the perfect dish.

Ingredients:

  • 1 lb Bougie Bologna (cut into ½ inch cubes)
  • 2 ounces Unsalted butter (½ stick)
  • 1 medium White onion (chopped)
  • 1 medium Poblano pepper (seeded and chopped)
  • 1½ cups Baby bella mushrooms (quartered)
  • 4 cloves Garlic (chopped)
  • 1 cup Dry white wine
  • 1 quart Heavy cream
  • ¾ cup Castelvetrano olives (halved)
  • ¼ cup Fresh basil leaves (chopped)
  • ¼ cup Italian flat leaf parsley (chopped)
  • 2 tablespoons Fresh lemon juice
  • Louisiana Love Seasoning Blends to taste
  • 1 lb Penne rigate pasta (or short cut pasta of choice)

Method:

  1. Place a large, heavy skillet over medium high heat and add Bougie Bologna cubes.
  2. Cook until well browned on all sides, remove, and reserve.
  3. Add butter, once melted add onions, peppers, and mushrooms cooking until onions are clear.
  4. Add garlic and cook for 1-2 minutes.
  5. Deglaze with wine and cook for 1-2 minutes.
  6. Add cream and bring to boil.
  7. Thicken with flour mixture, adding slowly until desired consistency, reduce heat to simmer and cook for 3-4 minutes.
  8. Season with Louisiana Love.
  9. Add bologna, olives, basil, parsley, and lemon juice.
  10. Prepare pasta according to package directions and add to sauce.
  11. Taste and adjust seasoning.
