16 ounces beef tips ( small dice)
2 links of smoked pork sausage (small dice)
½ C vegetable oil
1 medium onion (small dice)
2 T minced garlic
salt/black pepper/cayenne pepper to taste
chicken stock or water (as needed)
16-18 ounces of Bow Tie Pasta (pre-cooked)
¼ C fresh chopped parsley
¼ C fresh chopped green onions
In a cast iron pot, heat the oil over medium-high heat. When the oil is hot, add the beef tips and allow to brown until golden color is achieved. When the beef is fully browned add the sausage. Continue to brown until the sausage is fully browned as well. Next add the onions and garlic. Allow them to cook until the onions are caramelized. When this step is complete, add the chicken broth or water. Let the pot come to a simmer, adding liquid as needed until the meat is tender, about 2-3 hours. When the meat reaches desired tenderness, add the cooked pasta and gently stir the pot together. Taste for seasoning and add at this point if needed. Finally, add the green onion & parsley. Serve topped with sliced green onions & fresh shredded parmesan cheese.
