Grilled Fish:
More of a technique than a recipe here are a few tips for perfectly grilled fish.
- Make sure the fish is as dry as possible before applying seasoning and oil.
- Set up the grill to have two cooking zones, one hotter than the other. For thick fillets of fish, transfer to the cooler side once seared.
- Once placed on the grill, leave the fish untouched for 2-3 minutes.
- Don’t overcook, an internal temperature of 150° is all that is needed.
- Louisiana Love is the perfect seasoning blend to enhance any fish’s natural flavor.
Citrus Coconut Rice:
Ingredients:
2cups Medium grain, Louisiana rice
1(16 oz can) Coconut milk
16oz Water
2tablespoons Fresh lemon juice
2tablespoons Fresh lime juice
Kosher salt, pepper, and Louisiana Love to taste
Method:
Rinse the raw rice with cold water until runoff water is clear.
Place rice in suitable pan, or rice cooker.
Add coconut milk, water, citrus juices, and seasonings.
Cover and cook until rice is tender (Approx. 15 minutes).
Taste and adjust seasoning.
Note: The citrus flavor will fade during cooking. Add some additional fresh citrus juice just before serving for a more pronounced flavor.
Cheesy Zucchini Rounds:
Ingredients:
2 large Zucchini squashes
Olive oil
Louisiana Love Seasoning Blend
¼cup Shredded parmesan cheese
¼cup Shredded Colby/Jack cheese
Method:
Preheat oven to 425°if baking.
Place large skillet or griddle plate over fire.
Slice the zucchini ¼ of an inch.
Coat lightly with olive oil, and season with Louisiana Love.
Place rounds in a single layer and bake/grill for about 3 minutes or until they are well browned.
Turn and top with small amount of each cheese.
Bake/grill until cheese is melted.
