Cajun Philly Cheese Steaks
Ingredients for Cheese Steaks:
2lbs. Beef roast (Ribeye, Chuck tender)
4ea. Po-boy buns
3-4 tablespoons Unsalted butter
1 recipe Aioli
6 tablespoons Olive oil (divided)
1lg. Yellow Onion (sliced)
1ea. Red, Yellow, and Orange Bell Pepper (sliced)
1lb. Baby Bella mushrooms (sliced)
1lb. Colby Jack Cheese (shredded)
1lb. Provolone Cheese (sliced)
Louisiana Love Seasoning to taste
Method:
Preheat oven to 400°
Slice the beef roast across the grain ¼” in thickness.
Note: Freezing the roast until firm makes this much easier.
Place onions in small skillet with 1 tablespoon of olive oil and cook slowly until caramelized, then remove.
Butter the inside of each of the buns.
Place a heavy, large skillet over medium high heat, place the buns butter side down, and toast until well browned.
Remove buns, close, and place in oven for 7-10 minutes or until the outsides are crunchy.
Add half of olive oil to skillet, add peppers and mushrooms, and sauté until cooked but still firm, then remove.
Add remaining olive oil to skillet and add beef slices in single layer, cook for one minute then flip and cook for another minute.
Add the peppers, mushrooms, and onions, on top of the beef followed by the cheeses.
Spread the aioli on each of the buns.
Divide the mixture between each of the buns and serve.
Ingredients for Aioli:
1 Whole egg (room temperature)
1 Egg yolk (room temperature)
2 cups Olive oil
2 cloves Fresh garlic (peeled crushed)
1 tablespoon Fresh lemon juice
Kosher salt, Louisiana Love to taste
Method:
Place egg, yolk, garlic, and salt (start with ½ teaspoon) in a mason jar type container.
Add a couple of drops of oil, and using an immersion blender (stick type), blend for 10-15 seconds until the mixture turn pale yellow in color.
Slowly add olive oil in a thin stream while blender is running.
Once about half of the oil is added, mixture will start to thicken. As additional oil is added mixture will turn solid.
Move blender up and down incorporating liquid oil.
Once all of the oil is added, taste and adjust seasoning.
