Korean Barbeque Short Ribs
With one of the most addicting flavor profiles you will taste, this incredible dish can be served many ways. The ingredient list may be long, but the effort is well worth the exercise.
Ingredients for marinade:
3” piece Ginger (grated)
½ onion White (chopped)
4 cloves Garlic (chopped)
1 cup Cold Water
2tablespoons Fresh lime juice (1 large)
½ cup Soy sauce
¼ cup Mirin
1 tablespoon Rice vinegar
2 tablespoons Honey
1 tablespoon All-Purpose Seasoning
1 tablespoon Granulated Garlic
1 teaspoon Ground Coriander
¼ teaspoon Cayenne Pepper
1/8 teaspoon Ground cloves
1/8 teaspoon Allspice
1 teaspoon Sesame Oil
Ingredients for dish:
3 pounds Beef short ribs (Cut Korean style)
1 cup Kimchi (Korean pickled cabbage)
1 pound Imitation crab meat
2-3 tablespoons Sriracha sauce
½ cup Mayonnaise
1 small package Dried rice noodles
2 tablespoons Black sesame seeds (toasted)
All-purpose seasoning to taste
Method:
Combine all of the marinade ingredients in a large bowl and stir well.
Add ribs and toss to coat.
Marinate in the refrigerator for 8 hours or overnight, tossing occasionally.
Note: Ribs can be frozen in the marinade for up to a year.
Grill ribs over medium heat hardwood fire for 5-7 minutes taking care not to burn.
Baste ribs with marinade on each turn.
Remove from grill, cut meat into small pieces or thin strips and set aside.
Prepare a large bowl of ice water.
Place a large pot of water to simmer.
Add noodles to water and let cook for 5-6 minutes.
Remove to ice water until completely cooled, then drain.
Combine Sriracha with mayonnaise.
Chop kimchi and crab meat.
In a large bowl combine noodles, ribs, mayonnaise mixture, kimchi, crab meat, and sesame seeds.
Taste and adjust seasoning.
Stay hungry.
