French Bread French Toast:
Ingredients:
2 eggs
1 cup Granulated sugar
1 cup Whole milk
1 teaspoon Kosher salt
1 teaspoon Mexican vanilla
1 pinch Cayenne pepper
2 tablespoons Unsalted butter
2 tablespoons Olive oil
5-6 slices French bread (2 inches thick)
Method:
Combine the first six ingredients in a large bowl, whisk well to blend and set aside.
Place a large, heavy skillet over medium heat and add butter and oil.
Place bread slices into egg mixture being sure to saturate.
Place in skillet and let cook for 3-4 minutes or until browned, then flip and cook for 2-3 minutes more.
Remove to plate and serve with syrup or powdered sugar.
Breakfast Sausage
Ingredients:
1pound Ground pork (80/20 fat content)
1 tablespoon Rubbed sage
Kosher salt, fresh cracked black pepper, and all-purpose seasoning to taste
Method:
Place well chilled pork in large bowl, and add 2 teaspoons of sage at first.
Season with other seasonings to taste.
Cook a small test piece and taste for seasonings.
Adjust seasoning as desired.
